Indian Style Spiced Cabbage

This recipe is very similar to my Indian Spiced Green Vegetables but uses cabbage as the main ingredient.  It is very simple and can be served as a side dish or eaten as a snack on its own for lunch.


What you will need:

Cabbage, as much as you need
10 - 15 curry leaves
1 small clove garlic, crushed
1/2 tsp ground cumin
Oil for cooking
Salt to taste (optional)

What you need to do:

1. Finely slice up the amount of cabbage you need, remember it shrinks a lot when cooked.


2. Heat some oil in a pan and add the curry leaves, then garlic and ground cumin, fry for a couple of minutes.


3.  Add the cabbage and mix well.  Stir fry and then add a small amount of water.  Cover and steam for a couple of minutes. 


4.  Continue to stir until the cabbage is tender but still firm.  Add salt if required.  Serve as a side dish or tasty snack.
