Tomato and Chickpea Salad

This is a very quick and easy salad that is also healthy, and delicious.  You can vary the amounts of ingredients depending on how many people you are serving.



What you will need:

1 - 2 cans of chickpeas, drained and rinsed
6 - 8 ripe tomatoes
1 - 2 spring onions, finely sliced
Juice of 1 lemon
Olive oil
1/8 to 1/4 tsp ground cumin
Salt and pepper, to taste
1/4 - 1/2 cup of finely chopped parsley


What you need to do:

1. Drain and rinse chickpeas and place in a bowl.

2. Chop tomatoes into 1.5cm(ish) cubes and add to chickpeas.

3. Finely slice spring onions and add to the bowl.

4. In a small jar combine the lemon juice, olive oil, cumin, salt and pepper.  Mix to combine.  As a general rule you would use 1 part lemon juice to 2 parts olive oil.  Don't over-dress the salad as the juices from the tomatoes will also add to the dressing.

5. Finely chop parsley and add to salad.

6. Pour over dressing, mix well and refrigerate.

7. Before serving, mix well again.
